Vada is usually made of thick, less spicy chili stuffed with roasted potato masala and fried after wrapping it in a batter of gram flour. But you can use moong dal stuffing and make strips of maida instead of gram flour batter. Let us tell you the easy Indian recipe on making chili vada.

First of all, to knead the dough for Mirchi Vada, mix all purpose flour, salt and ghee and rub it for 2 minutes.


Knead a hard dough by adding little cold water. Do not knead too much, cover with a damp cloth and keep aside for 10-15 minutes.


Meanwhile, heat a pan for stuffing and add oil to it. Then sprinkle asafoetida, green chili, ginger, coriander seeds and cumin seeds in it. Fry them for 30 seconds on low flame and add moong dal.  (Wash and soak the lentils for at least 3 hours and then use after draining all the water.)


Cook the dal for a minute and then add salt, turmeric, red chili powder, coriander powder, cumin powder and fennel powder. Cook on low flame and then add boiled and mashed potatoes. Mix it well and cook on high flame for 2-3 minutes. Add mango powder, mix and take out in a plate to cool completely.


Now press the dough and roll it thin. Do not use dry flour or oil for kneading the dough. Now make an incision in the middle of the chili and take out the seeds of the chili with a small spoon. Stuffing the chili. But avoid filling too much, as this will cause the stuffing to leak out. Keep it aside.


Now with the help of a sharp knife cut the dough into long strips about 1/3 cm to 1 cm wide. Dip your fingers or brush in the water and then lightly brush the strips over the top and drape them gently over the chili.


Then put oil in the pan and heat it and deep fry the chillies in it.  Your Crispy and Tasty Mirchi Vada is ready. Serve it hot with coriander-mint chutney and tomato sauce.

  • Potatoes (boiled and mashed) - 1 cup
  • Amchur powder - 1 tbsp
  • Green coriander chopped - handful
  • Fresh chilies (large and thick) - 6
  • Oil - for frying
  • Salt according to taste
